Lemon Slice

Lemon Slice



  • 1 & 1/2 cups ground almonds
  • 1/2 cup tapioca flour
  • 1/4 tsp baking soda
  • Pinch of sea salt
  • 1 egg
  • 3 Tbsp coconut oil, softened
  • 1/2 tsp vanilla extract
  • 2 Tbsp maple syrup
  • Zest of 1 lemon


  • 3/4 cup cup lemon juice (about 4 lemons)
  • 1/4 cup coconut milk
  • 3 eggs
  • 3 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 Tbsp tapioca flour


  1. Pre heat the oven to 180 degrees.
  2. In a bowl, mix together all the base ingredients and press into a lined baking tin. My tin measured 25x25cm.
  3. Bake base for 13-15 minutes.
  4. In the same bowl, whisk together all of the topping ingredients. As soon as the base comes out of the oven, pour the egg topping over the top. It is important to do this while the base is still hot. 
  5. Place the slice back into the oven and bake for 15 minutes or until set. 
  6. Leave the slice to cool down to room temperature then place in the fridge to cool for 2 hours before slicing.
