Hummus Base

  • 600g Can Chickpeas
  • 1 tsp cumin
  • 2 tbsp tahini
  • 3 cloves garlic
  • Juice of one lemon
  • 100ml olive oil
  • Water (desired consistency)
  • Coriander

1. HARISSA

1 tbsp harissa paste

1 tsp finely chopped red onion

1 tsp finely chopped mint leaves

1 tsp Greek-style yoghurt

2. PINE NUTS + PARSLEY

2 tbsp chopped flat leaf parsley

2 tsp toasted pine nuts

2 tbsp fresh lemon juice

3. ROASTED RED PEPPER

2 tbsp finely chopped roasted red capsicum

6 pitted kalamata olives

1 tsp olive oil

1 tbsp finely chopped mint leaves

4. ZA’ATAR

1 tsp za’atar

2 tsp finely chopped preserved lemon

1 tsp olive oil

1 tsp chopped cashews

chili flakes to taste

5. RAD-O-CADO

2 small radishes finely chopped

1/2 avocado mashed

1 tbsp finely sliced mint leaves squeeze of fresh lemon juice

6. PESTO

1/2 tsp pesto

4 cherry tomatoes quartered

4 slices bocconcini

7. POMEGRANATE

1/2 tsp pomegranate molasses

2 tsp finely chopped preserved lemons

pomegranate seeds for garnish

8. FRESH GREEK

1/2 Roma tomato chopped

1/2 Lebanese cucumber chopped

1 tbsp finely chopped red onion

1 tbsp finely chopped mint leaves

1/2 tsp olive oil drizzled on top
