I love the idea of using halloumi as the protein source for pizza as opposed to the more traditional meat options such as bacon, chicken, salami etc that we often pack on top of a pizza.
With the amount of vegetarian protein sources available to us, it is now a lot easier to prepare a meat-free meal that is both tasty and nutritious.
2 x wholegrain wraps
2 heaped Tbsp pesto
1 red capsicum, sliced
1 handful of cherry tomatoes, sliced
8 large olives, sliced
180g Halloumi Cheese
- Spread the pesto over each wrap. Arrange the capsicum, tomato and olives on the wrap. Top with the sliced halloumi cheese.
- Bake at 190 degrees for 10 minutes then grill on medium heat for 2 minutes or until the halloumi is golden.
